INSHI Bistro came to be in the heart of Lviv, on Soborna Square. It is an embodiment of a bold idea of restaurateur Yevhen Klopotenko and entrepreneur Inna Popershniuk.
Yevhen Klopotenko is a well-known Ukrainian chef and the only Ukrainian who has achieved “The World’s 50 Best Restaurants” status – a list of professionals who expand the boundaries of gastronomy. Among Yevhen’s important victories was securing a spot for Ukrainian borshch on the UNESCO List of Intangible Cultural Heritage.
Inna Popershniuk is a well-known entrepreneur and public figure in Ukraine and abroad, the co-founder of the "Nova Poshta" postal service. According to Focus magazine, she was rated among the “100 most influential women of Ukraine”.
Together they decided to not just open another restaurant, but to create something unique – a place where Ukrainian traditions harmoniously intertwine with global culinary trends.
To bring Ukrainian cuisine to the world’s gastronomic heritage, expanding horizons and presenting it in the latest interpretations.
The ambitions of the INSHI team are not limited to local success. The first stage of the plan was to launch a franchise in Ukraine in order to work out the business model between the franchisor and franchisee, and later enter international markets.
However, the strategy was changed at the request of the owners, and now the brand is focused exclusively on the markets of the UK, the USA and Japan.
Now, the team is actively negotiating with embassies and other representative offices of these countries in search of reliable partners.
To achieve this ambitious goal, it was necessary not only to develop a franchise, but also to create a system that would allow the INSHI brand to grow and develop abroad.
Our goal for the coming years is not just to increase the number of franchises, but to become a recognized leader in popularizing Ukrainian cuisine on a global level.
